We start with the so-called “milk pus test” and what it reveals about the U.S. milk supply. Dairy cows, which normally live for about 20 years, are typically culled for hamburger after only a few years when their milk production declines. A leading cause of this culling is mastitis, an infection affecting 99.7 percent of all dairy operations in the U.S.
The dairy industry maintains high allowable somatic cell concentrations—750,000 cells per milliliter—nearly double the international standard of 400,000. Somatic cells are primarily white blood cells, and elevated counts can indicate infection. With an average concentration of 204,000 cells per milliliter in U.S. milk, it suggests that approximately two-thirds of the contributing cows could be infected.
